‘Bacon Ranch and Cheddar Potato Casserole’ hits all the marks with an abundance of flavor, is easy to make and smells great as it bakes.

Bacon Ranch And Cheddar Potato Casserole
Makes: 1 13″ x 9″ baking dish
Ingredients:
10 cups (5-6 large potatoes) diced yukon potatoes
3 TB dry Ranch Dressing Mix
1/2 tsp black pepper
1/4 tsp salt
2 cups sour cream (light or non-fat will work)
1 cup chopped onion, or green onions
1 cup shredded sharp cheddar cheese
1 cup cooked chopped bacon (bacon alternatives like Dang bacon flavored coconut works)
Preparation:
Preheat oven to 350 degrees. Spray a 13″ x 9″ baking dish with non stick spray. Set aside.
