RAPID CITY, S.D. (KOTA) – Mercys Tacos is a food truck that’s been serving Mexican food since 2022.

However, before wheeling in her business, the owner used to sell out of her home.

“Eventually, we moved to saving up for our food truck. So, I did a lot of traveling. So we would load everything up in our truck and go to different reservations and have sales on the weekend,” Merceedes Jeffries, owner of Mercys Tacos, said.

When deciding what food to sell, Jeffries says it was based on her culture and her husband’s.

“Him being Native and then me being mixed we both like different types of food. So, Mexican food was something that was really popular for us in our household so that’s what we started cooking with,” Jeffries said.

Although they are known for their tacos, Jeffries says people also come for another item.
